These cheeses are usually aged for a moderate period, developing a balanced flavor that can range from mild to moderately strong. Examples include Gouda, Edam, Havarti, Leerdam, and Samsoe. Semi-hard cheeses often have a smooth or slightly open texture with some holes (called “eyes”) and are versatile for slicing, melting, or serving on cheese boards.
